Step one:
Fill fridge with good, healthy foods (and few not so healthy, but really yummy ones)
Step two:
Make yummy, healthy food!
Chicken broth, which was turned into chicken soup and the broth has been included in several meals. 

Mashed Cauliflower, Turkey Meatloaf, Broccoli

Chocolate chopped for homemade pudding

Carrots, roasted bell peppers and onions, amazing curry chicken

Brunch - left over sausage from filling acorn squash, eggs, avocado, tomato

Homemade junior's cheesecake (we had this in NYC) and homemade meyer lemon curd

Sunday Dinner - Wilted Spinach Salad (Mom's contribution!) Butternut Squash casserole, Moroccan meatballs over cauliflower rice pilaf.

Sugar free, grain free muffins - the top are almond flour and the bottom are coconut. Will def be making these again! 

Homemade Meyer Lemon Curd. Mmmmmmhmmmm.

There have been a lot of other foods I haven't taken pics of (stew, stuffed acorn squash, chicken soup, etc) but this is what has been going on in my kitchen the last 2 1/2 weeks!
